Vegan Turmeric Rice Recipe
Turmeric rice is a simple and flavorful side dish that adds a vibrant yellow color and warm earthy flavor to any meal. This recipe is perfect for beginners and can be easily customized with your favorite ingredients.
Ingredients:
1 tablespoon olive oil
1 medium onion, diced
1 clove garlic, minced
1 cup basmati rice, rinsed
1 1/2 cups vegetable broth (or chicken broth)
1 1/2 teaspoons ground turmeric
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup chopped fresh parsley (optional, for garnish)
Instructions:
Heat olive oil in a medium saucepan over medium heat. Add the diced onion and cook for 5 minutes, or until softened and translucent.
Stir in the minced garlic and cook for an additional minute, until fragrant.
Add the rinsed basmati rice to the pan and stir to coat with the oil and spices.
Pour in the vegetable broth (or chicken broth), turmeric, salt, and black pepper. Bring to a boil, then reduce heat to low, cover the pan with a tight-fitting lid, and simmer for 18-20 minutes, or until the rice is cooked through and all the liquid has been absorbed.
Remove the pan from the heat and let it sit for 5 minutes with the lid still on. This allows the rice to steam and fluff up.
Fluff the rice gently with a fork and transfer it to a serving dish.
Garnish with chopped fresh parsley (optional) and serve hot.
Tips:
For a richer flavor, you can substitute half of the olive oil with butter.
If you don't have fresh parsley, you can use another fresh herb like cilantro or chopped chives for garnish.
You can add other ingredients to the rice for additional flavor and texture. Here are some ideas:
Chopped vegetables like diced carrots, green onion, peas, or green beans
Cooked lentils or chickpeas
Chopped nuts like almonds or cashews
Raisins or dried cranberries for a touch of sweetness
Leftover turmeric rice can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop with a splash of water or broth.
